The Disneyland Resort's Signature Fine Dining team seeks talented culinary artists for full-time roles at Carthay Circle and Club 33. Responsibilities include operating kitchen equipment, maintaining food safety standards (HACCP), preparing and cooking a wide variety of dishes (from stocks and sauces to meats and desserts), handling special dietary requests, and collaborating with the team to deliver exceptional dining experiences. Roles include Dinner Cook (preparing and cooking various food items) and Demi Chef (using advanced cooking techniques, inventory management, and menu planning). The ideal candidate will possess at least 5 years of culinary experience or a culinary degree with 3 years' experience. Strong communication, leadership, and guest service skills are essential.

Responsibilities:

All Roles

  • Operate all kitchen equipment, including adjusting thermostat controls to regulate temperature of ovens, broilers, grills, roasters, and steam kettles
  • Maintain standards and specifications related to food preparation and food handling daily, understand measurement requirements
  • Uphold food safety and sanitation guidelines, including maintaining proper temperature requirements and HACCP (Hazard Analysis and Critical Control Points) procedures while understanding the science in cooking temperatures
  • Responsible for checking and maintaining proper temperatures throughout preparation, cooling, holding, and serving of food items, including adjusting thermostat controls to regulate temperatures
  • Observe and test food being cooked by tasting, smelling, and piercing with cooking utensils to determine that food is cooked properly, according to specifications
  • Clean kitchen equipment
  • Ability to handle special dietary requests and work with Guests requiring special requests due to dietary concerns

Signature Fine Dining/Dinner Cook

  • Prepare, season, and cook stocks, soups, sauces, meats, vegetables, desserts, and other foodstuffs for consumption in hotels and restaurants
  • Read menus to estimate food requirements and procure it from storage
  • Measure and mix ingredients according to recipes, using a variety of kitchen utensils and equipment, such as blenders, mixers, grinders, slicers, and tenderizers to prepare soups, salads, gravies, desserts, sauces, and casseroles
  • Bake, roast, broil, and steam meats, fish, vegetables, and other foods. Add seasoning to foods during mixing or cooking according to personal judgment and experience

Signature Fine Dining/Demi Chef

  • Use cooking techniques such as braising, baking, roasting (oven or rotating spit), and high-level skillet/sauté work
  • Ability to inventory product, read menus (BEOs, Restaurant Orders), and estimate food requirements to create a production plan
  • May prepare sauces “a la minute” using advanced sauce preparation techniques
  • Prepare confits and compotes, and create seasonings, cures, and rubs
  • May bone and clean shellfish, cut, trim, or grind meats, fish, or poultry
  • Must demonstrate ability to present and discuss menu item preparation with Dinner Cooks, Order/Grill Cooks, and Guests

Basic Qualifications:

  • You must be at least 18 years of age to be considered for these roles
  • Demonstrate 5 years of experience in culinary field/restaurant, or a culinary degree and 3 years of related experience
  • Strong communication and organizational skills; proven leadership and interpersonal skills with an ability to lead a team in a very fast-paced environment
  • Adept at troubleshooting and can calmly handle difficult situations
  • Proven ability to create, read, and understand recipes
  • Understand the purpose of the knife and when to use it
  • Exhibit a positive, friendly, and helpful attitude to our Guests and fellow Cast Members
  • Demonstrate excellent guest service skills and able to give appropriate service recovery
  • Demonstrate passion and enthusiasm for working in the kitchen
  • Proven knowledge of culinary techniques and terminology
  • Food Safety Certification or equivalent
  • Ability to work with technology (plate costing buffet system, CAFÉ system, KDS, Workbrain)
  • Must be flexible and able to work a variety of shifts, including days, nights, weekends, holidays and special events

Preferred Education

  • Vocation School training or High School certification
  • Culinary Education Degree, Certification from CIA, or equivalent
  • Basic wine knowledge

SCHEDULE AVAILABILITY
Our Theme Parks and Resort Hotels operate 24 hours a day, 365 days a year and some shifts may start as early as 5:00am while some may end as late as 3:00am, 4:00am or 5:00am Must be flexible and able to work a variety of shifts including days, nights, weekends, holidays and special events.
